That’s Florida Living. The heat has been BRRUUtal lately making me crave pitchers of lemonade!

Tips for making this lemonade

  • Use fresh beets only and not beet juices. The juices are from concentrate
  • My hands were stained for days after handling the beets. Learn from my mistake and wear gloves before you go anywhere near the beets
  • If you have leftover beets, cube or make thin slices of them. Place in a freezer friendly zip lock bags and write the date on them before freezing. They are usually good for 6 months. Use in soups or smoothies

  • Don’t discard the skin after peeling the beets. Put them in veggie stock recipes or compost them
  • I used vegan-friendly raw cane sugar in this beet lemonade recipe which is made with raw cane sugar and not refined. Plus it tastes soooo very good
  • Use a combination of lemons and limes because they add different levels of tang to the recipe
  • The beets will permanently stain the item you use for straining. I used a very old cheese cloth that I didn’t mind staining
  • If you have a juicer, use that to juice the beets. It will simplify your life. I don’t own one, so, I used the straining method

Why I love it!

I have regular lemonade recipe, but, its so boring to drink the same drink everyday. After the first day, I had enough of that recipe.

Lucky for me, I have a few lemonade recipes on my blog. I learned very quickly that, if I were to continue living in Florida, I best have a few drink recipes on hand for when the sun is bearing down!

I am not a fan of beets, so, I have to put them into recipes that will make me consume beets. I remember when growing up I would have to be force-fed beets. Not a fun experience, but, definitely good for me.

It made sense to add beets to lemonade because I wanted a pink lemonade without artificial colors. Don’t like beets? The good news is that you can use several different kinds of veggies to make your lemonade. Have you tried a cucumber lemonade?

Answering Common Questions

Can I use a juicer for the beets?

Absolutely. In fact, I recommend it over the blender + straining method. I don’t have a juicer, so, I had to get creative with my juicing techniques. I think this recipe has taught me that I need to get a juicer ASAP.

Can I use bottled or canned beet juice in this beet lemonade?

No, absolutely not!! The one thing about using store bought juices is that they are from concentrate and / or add other juices. To make this beet lemonade recipe work, all you want is raw beet juice

How much juice in one beet?

One beet has about ¼ cup to ½ cup of juice. I used a small, peeled beet for this beet lemonade and I used a blender to crush the beets. The finer you crush the beets, the more juice you will get from the beet

Why is regular sugar not vegan?

Many sugar companies use animal bone char to “cut” the sugar. The bone char helps strip the color of the sugar and give it the characteristic white color. Luckily, these companies are looking for alternate options and the industry is becoming more vegan friendly

Ingredients

To Juice the Beets

  • 1 beet peeled roughly chopped (see notes)
  • 2 Tbsp water

For the Lemonade

  • 2 limes
  • 3 lemons
  • 1 cup raw cane sugar or to taste
  • 6 cup water
  • ice cubes

Instructions

  • In a medium sauce pan, add water and raw sugar

  • Heat on medium heat until sugar is melted

  • While water is heating, juice all the lemons and limes

  • In a blender, blend the beet pieces plus the water

  • Place the blended beets in a cheese cloth over a bowl

  • Strain until nothing but the pulp remains on the strainer

  • In a jug, add the beet juice, sugar water, lemon and lime juice

  • Add ice cubes

  • Serve Immediately
